Many of the recipes that I share I get from online — then I do some tweaking to make it my own and bring it here. This is a recipe that I made and I’m now tweaking even more before I give it to you. Whoever originally made it must have done something completely different because I ended up with more noodles and not enough sauce.
So what I’m sharing with you today is “Sage and Butter Mushroom Tortellini” — it’s probably a new favorite.
I adore mushrooms, so I was trying to figure out what a good recipe would be to use mushroom and I found one with tortellini. Now, let me tell you where this recipe first messed up for me: originally the recipe called for a 25-ounce package of cheese tortellini. Well, the only one I could find was a 12-ounce bag so I got two.
This was my first mistake.
The recipe called for 7 ounces of mushrooms and I got 8 ounces because .. why not? I cooked the tortellini according to the directions on the package and cooked my mushrooms in a lot of butter and sage. Well, after I drained the tortellini I realized I’d made a mistake.
I had enough mushrooms and butter/sauce for two servings with the pasta … I had three more servings of pasta that were just there.
So I ended up eating the tortellini with normal pasta sauce which I will say is a downgrade from the mushroom and butter sauce thing I had for two of them. Now I’ve changed the recipe for you so you might not have the same issue and I added more garlic than was called for because … why not?

12 ounces of tortellini
3 tablespoons of sage
3 tablespoons of butter
8 ounces of sliced cremini mushrooms
1/2 cup of parmesan cheese
3 tablespoons of garlic
Salt and Pepper
***
Directions …
Cook tortellini according to the package directions. While the tortellini is cooking add 1 tablespoon of butter a skillet on medium high heat with a tablespoon of sage.
Once butter is melted add mushrooms, garlic, salt and pepper, another tablespoon of butter and one tablespoon of sage. Cook until mushrooms are tender.
Add cheese and tortellini to the skillet or add mushroom mixture to pot tortellini was cooked in along with the cheese. Add the last tablespoon of butter and sage.
Serve and enjoy.
