Tell us about your restaurant/ history?

The Bagpiper is a student-ran restaurant at Scotland High School were students serve their lessons on a platter.

“The culinary program started in the 2006/2007 school year and the restaurant opened in March 2008,” said Steve Dibble, chef and lead instructor for The Bagpiper Restaurant. “We give students hands-on experience for the culinary and food service world,”

Dibble said the restaurant has three instructors that oversee 200 students per semester. The students are taught Introduction to Culinary where they are shown the basics and become food certified. He said that Culinary 1 is where they learn cooking methods and Culinary 2, advanced methods like knife skills.

What are your specialties?

“We change menus every two weeks (and) we do themes,” said Dibble. ” Next week will be American style.” The restaurant has done various menus like Italian, French, Polish, Asian and more.

“We normally do two soups, four entrees, and two or three types of sandwiches depending on the theme,” added Dibble.

Talk about your most popular dish:

“It is hard to say because we change menus a lot, (but) the chicken wings are always bestsellers when we make them,” said Dibble.

The most recent menu has been Italian with dishes like Italian Panini, grilled salmon, three cheese ravioli, and lasagna.

What attracts customers to your restaurant?

“The general public knows we are here and they come to support the culinary program, it’s a unique dining experience,” said Dibble.
