Holiday meals are being planned across the country, and one of the big decisions for any good meal is usually centered around the gravy or sauce that will be served — because, as we all know, it’s the sauce or gravy that makes the meal.

Especially for the leftovers.

This recipe for Hunter’s Sauce, brought to you by the Broken Arrow Ranch in Texas, will bring a whole new dimension to your holiday meal.

Ingredients …

2 tblsp butter

2 tblsp onion or shallots, minced

1 cup mushrooms, sliced

½ cup dry white wine

2 tblsp brandy

½ cup tomato sauce

1 cup Brown Sauce

1 tsp chopped parsley

Directions …

Sauté 2 tblsp minced onion or shallots in 2 tblsp melted butter until tender. Stir in 1 cup sliced mushrooms and gently sauté for about 2 minutes.

Then add 1/2 cup dry white wine and 2 tblsp brandy and simmer until the quantity is reduced by half.

Add 1/2 cup tomato sauce and 1 cup Brown Sauce and continue cooking for 5 minutes, then correct the seasoning and add 1 tsp chopped parsley.

Makes about 2 cups.
