Crispy Breaded Mashed Potato Cubes with a fluffy center makes the perfect addition to any salad. You can also dip them in a delicious sauce for a quick snack.

1 cup instant mashed potatoes, prepared
3 teaspoon green onion, chopped
1 cup panko
¼ cup flour
1 egg, beaten
1 cup oil
Salt to taste
Prepare the instant mashed potatoes as indicated on the package.
Mix the mashed potatoes with the green onion and salt.
Shape the mashed potatoes into cubes of your desired size and coat them with the egg, flour and panko.
Fry the cubes until golden brown and let them drain on paper towels.
Serve with your choice of dipping sauces or add them to salad.
