This parchment pouch dinner recipe combines mild and flaky barramundi fish, green beans, and fingerling potatoes for an easy, all-in-one meal.
2 – 6 oz. barramundi Filets
2 cups fingerling potatoes
2 cups fresh green beans
2 cloves of garlic
1 Tablespoon olive oil
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 medium lemon
Prep Time: 10 minutes | Cook Time: 15 minutes
Preheat oven to 375º F
Par boil the potatoes for 8-10 minutes in boiling water
Arrange the potatoes, then the green beans in the center of the parchment paper. Place the fish over the beans and sprinkle with salt, pepper, paprika. Add 2 lemon slices then top with 2 thyme sprigs
Drizzle oil over everything
Fold the sheet of parchment into a sealed packet
Place on a baking sheet and bake for 15 minutes
